Quick and Easy Chocolate Mousse

Need dessert in a hurry? It doesn't get easier than this quick chocolate mousse. Silky smooth and satisfyingly good with only four ingredients and 5 minutes of your time. It does need a little time to chill, but could also be eaten immediately if you can't wait!


This is a "special occasion" recipe as it contains quite a bit more sugar and fat than what one should normally consume on a healthy plant-based diet. Still it is much healthier than the traditional mousse which uses eggs and whole milk or heavy cream. This one is even garnished with a healthy whipped "cream".


This recipe uses aquafaba in place of the eggs. Aquafaba is the liquid from a can of chickpeas. Simply open the can and pour into a strainer catching the can liquid in a bowl underneath. You will use only part of the liquid for this recipe. The rest can be used to make the Whipped "Cream". Save the chickpeas for my Mashed Chickpea Sandwich filling or another use. The rest of the silken tofu can be used to make my Healthier Mayonnaise.


Quick and Easy Chocolate Mousse

Serves 4


5 tablespoons aquafaba

1 cup silken tofu

1 1/4 cups vegan semi-sweet chocolate chips (see Note)

4 tablespoons hot coffee (preferably strong coffee)


Place all ingredients in a blender jar in the order listed and blend at highest speed 2 minutes until completely smooth. I use a Vitamix blender, but depending on the power of your blender, it may take longer than 2 minutes to become completely smooth. Pour into four dessert cups and chill one hour. Serve topped with my Whipped "Cream" and garnish with berries.


Note: Many semi-sweet chocolate chips contain milk which is not compliant with a whole foods, plant-based diet. A dairy-free brand I like is Enjoy Life which has only three ingredients: cane sugar, unsweetened chocolate, and cocoa butter.
