Healthier Mayonnaise

Healthier Mayonnaise? Can the words "health" and "mayonnaise" ever go together? Well, yes when you make your own! Grocery stores carry commercially prepared plant-based mayonnaise (made without eggs) that are very high in fat as they are mostly oil. Here is a healthier, easy to make version that is oil-free and egg-free. Try it in Mom's Potato Salad or use it on sandwiches or as a base for a dip.


4 ounces silken tofu (see note)

1/2 tablespoon lemon juice

1/4 teaspoon agave nectar

1/8 teaspoon mustard powder

1/8 teaspoon salt

dash of white pepper


Blend all ingredients in a bowl using a wire whisk until smooth. If you don't have a wire whisk a fork will work too but will take longer. You can also use a food processor or blender but the mayonnaise will come out thinner.


Note: Silken tofu is usually sold in 16 ounce containers. Use the extra in my Quick and Easy Chocolate Mousse!
