Macro Plate with Creamy Cashew Dressing

What is a macro plate? If you search this term you will find a lot of answers and recipes - each a little different from the next. Some say it's a plate containing all the macronutrients (protein, carbohydrates, and fat). Others say it is a plate based on a "macrobiotic diet" which usually includes grains, greens, healthy fats, vegetables, and fermented foods. A restaurant I used to frequent had a macro plate that was heaped with all kinds of delicious and healthy vegan foods - brown rice, black beans, tofu, cooked collard greens, Brussels sprouts, carrots and a creamy dressing. Since that restaurant is now closed I've created my own version of the macro plate complete with a creamy cashew dressing. If you use frozen brown rice, canned sauerkraut and broil the Brussels sprouts and tofu together (see Notes) this is quick and easy. It's also a very versatile recipe - switch up the vegetables, greens, and beans according to what you like and have on hand.


Macro Plate with Creamy Cashew Dressing

Serves as many as you want to make!


For each plate:

1 cup greens - arugula, baby kale, mesclun are all good

1/4 cup each of: cooked brown rice, sauerkraut, shredded carrots, chick peas

several cooked Brussels sprouts (or any roasted vegetable you like) (see notes)

6-8 pieces of cubed and broiled tofu (see notes)

1-2 Tbs of slivered almonds (or nuts of choice), optional


Arrange all the ingredients on a plate and drizzle with Creamy Cashew Dressing to taste.


Notes: You can broil the tofu and Brussels sprouts together. I like to toss the tofu cubes in a little Tamari and pepper before broiling. I leave the Brussels sprouts unadulterated but feel free to sprinkle with salt and pepper. Spread your Brussels sprouts and tofu on a parchment paper lined baking sheet and broil 10-13 minutes.


Creamy Cashew Dressing

1/4 cup raw, unsalted cashews

1/2 cup water

1 Tbs low-sodium Tamari

1 Tbs maple syrup

a few dashes of garlic powder


Combine all ingredients in a high-powered blender and process until completely smooth and creamy. The dressing makes enough for 2 or 3 macro plates.
