There are times when an unusual sounding combination of superstar veggies comes together and the result is nothing short of spectacular. This is such a time. Yes, every sandwich on this site is absolutely fantastic, but this one stands out as a real star and is a MUST TRY.


It starts with whole grain crusty bread. I use Whole Foods "Seeduction" bread. It doesn't really matter what the bread is called as long as it is not processed, uses whole grains, and most importantly is relatively flat (or on the flat side). The bread is sliced crosswise and then lengthwise through the center so that you have four relatively flat pieces (see photos below recipe instructions). The bread is then slathered with a delicious vegan cheesy sauce and layered with roasted sweet potato slices, pickled onions, cucumbers, avocado slices and micro greens. I don't know if it's the combination of sweet, sour, and umami flavors or simply the variety of colors and textures but this is literally THE BEST whole food, plant-based vegan sandwich ever! And super easy too! Happy Plant-Based Eating!


Best Vegan Sandwich Ever

Makes 4 large sandwiches


1 small loaf of whole grain flat-ish bread

1 sweet potato, cut into 1/4 round slices - any sweet potato variety will work well

1/4 cup pickled red onions (Jeff's Garden brand has a nice jar of these)

16 slices cucumber

1 ripe avocado, cut into slices

1/2 cup or more of micro greens

"Sauce" of choice - vegan cheese sauce (see recipe instructions), hummus, or mustard are all good


Preheat oven to 400°. I like to peel my potato slices after baking. The peel helps the potato to stay moist. You can also leave the peel on if you prefer. Place the sweet potato slices on a parchment-paper lined baking sheet. Bake about 20 minutes or until fork tender. Let cool. Peel skin if desired.


Slice the bread crosswise into two halves. Then take each half and slice lengthwise through the middle of the bread so you have four flat top and bottom pieces. Spread the inside of all the halves with your sauce choice. This sandwich tastes best with a creamy, cheesy spread like this cashew cheese mozzarella, but you can also use hummus or even mustard - just something to add flavor and moisten the bread.


Place a layer of sweet potato slices on the bottom half of each of the bread halves. Top each with the pickled onions, cucumber slices, avocado slices and micro greens. Place the top of each of the bread halves on top of the greens and press down. Slice each half in half. It is preferable to use an electric knife for this purpose as you will get a cleaner cut. You should now have four sandwiches. Sit down and enjoy with three other sandwich lovers! They'll thank you!
