Easy Black Bean Burgers

Black beans are perhaps the most common ingredient for veggie burgers. Maybe it's the color, maybe it's the way they compliment other flavors, or maybe it's just because they mash so easily that you don't need any special equipment! If you have a food processor or mini-chopper you can mince everything else in this recipe quite easily for a fast and delicious burger! And it holds together well enough that it can go on the grill using a grill pan.


Easy Black Bean Burgers

Makes 2-3 burgers


1 can black beans, rinsed and drained

1 medium carrot, minced or grated

1/2 small onion, minced

1/4 red pepper, minced

3 white button mushrooms, minced

1 garlic clove, minced

1/4 cup rolled oats

2 tablespoons oat flour (or other whole grain flour)

1 teaspoon Italian herb blend

1/8 teaspoon chili powder

pinch of red pepper flakes


Mash black beans in a large bowl (or chop them to almost a puree in a food processor). Add all other ingredients and combine well. Form into 2 or 3 patties. Fry in a non-stick pan until brown on one side. Flip and brown the other side. This will take about 5 minutes per side. Serve with your favorite whole grain bun or open-faced on lettuce for a lower calorie option.
