6 Lunch Ideas You Can Make in 20 Minutes or Less

One of the things I hear most often from people who want to try plant-based is "WHAT DO I EAT FOR LUNCH???" They are used to having a sandwich that is quick and easy to put together with store bought cold cuts or chicken/tuna salad. Those choices are full of saturated fat, cholesterol and salt. In addition, processed meats are classified as a Class 1 carcinogen by the World Health Organization. So what do you replace that ham sandwich with? What is the center of the lunch plate?


Here are six lunch ideas that will replace that lunch box turkey/ham/chicken sandwich. With a little weekend batch cooking of some staples such as rice, tofu cubes, and cut up veggies, each one can be made in 20 minutes or less. Each recipe makes multiple servings so you can just pull it out of the fridge when packing lunch. Add a piece of fruit, or a side salad and you have a delicious lunch!


EASY NO-EGG SALAD

Here is an easy "no-egg" filling that you can make in a jiffy with just 7 ingredients. Pile it on some hearty whole grain bread with lettuce and tomato and you have one great sandwich!






FIESTA CORN SALAD

Corn off the cob is seared in a pan in this cool, fresh summer salad. It can be assembled in 15 minutes and with its mix of hot and cold vegetables it is sure to please for a nice bright lunch on a warm summer day.
