One of the things I hear most often from people who want to try plant-based is "WHAT DO I EAT FOR LUNCH???" They are used to having a sandwich that is quick and easy to put together with store bought cold cuts or chicken/tuna salad. Those choices are full of saturated fat, cholesterol and salt. In addition, processed meats are classified as a Class 1 carcinogen by the World Health Organization. So what do you replace that ham sandwich with? What is the center of the lunch plate?
