
Tip of the Week: The vitamin C in limes and other citrus fruits helps the body absorb iron when eaten with plant-based sources of iron (nonheme iron) like beans, lentils, leafy greens, quinoa, and tofu. Limes are also packed with essential nutrients such as potassium, magnesium, phosphorus, calcium, folate, and choline, along with small amounts of vitamins A, E, and K. This course is similar to the Kickstart Your Health course but does not have a cooking demonstration. It is a four class series suitable for a location where a cooking class is not feasible. Depending on one’s perspective, Nutrition Essentials is about losing weight, maintaining a healthy weight, or simply embracing an overall healthful way of eating. Single classes are also offered.
