Plant-based Ceviche

If you are familiar with ceviche then you know it's a raw seafood salad made with some type of white fish and lime juice. The lime juice supposedly "cooks" the fish. Yuck! In this plant-based version you don't have to worry about eating raw fish and there is no oil or sugar added as is typical with classic ceviche. Cauliflower is used instead of fish but all the other essentials are there - lime juice, tomatoes, red onion, jalapeño, and avocado. If you use frozen and thawed riced cauliflower it can be ready in about 10 minutes! This recipe makes for a great cool summer salad or first course to an elegant dinner.
